Simple, nourishing breakfast ideas

We will make so many choices throughout the day about what we eat, what we say, and how we will choose to respond to things. Breakfast is often one of the first choices we have to make in the morning. It can get boring and dull, but it doesn’t have to be. We all know that breakfast fuels our energy and can help us embark on a new day, but time is often a factor that can make it hard to plan a fancy breakfast. Here are a few simple but healthy breakfast ideas to inspire you. Please also share your own in the comments section.

-Homemade granola bars: Obviously these ones need to be made ahead of time to make it a simple breakfast choice in the morning. I just love homemade granola bars. I try to pick those that include a lot of nuts, seeds, dried fruit, all the things that give you that morning boost that starts your day off right. Any of the recipes for homemade bars featured on www.ohsheglows.com is a must try.

-Whole wheat, sugar-free pancakes: I found a recipe in the cookbook “How to feed a family” that my family could live on if they had the choice (especially our little boy). It’s sugar-free and is so easy to follow. I usually will have one of these with some homemade jam – so delicious.

-Overnight oats: There are so many great, creative recipes for overnight oats. It usually includes oats, some type of milk (cow-based or dairy-free), and different types of combinations of fruit, seeds and other wholesome ingredients. Make these the night before and it’s in your fridge ready to go as you head out the door. Be sure to check out by most recent recipe for Chocolate raspberry overnight oats

-Breakfast tortillas: This is a new one for me. I started recently combining flavors that work well together for a fun, portable breakfast option that will melt your heart. Fresh salsa with white cheddar is a great one. Or try black beans with some butternut squash, maybe with old cheddar. Check out the Brie & pear quesadilla recipe featured along with this article.

-Yogurt parfait: Yogurt, berries and homemade granola is definitely a great way to start the day. Our favorite granola by far is Angela Liddon’s recipe for Vanilla super-seed granola, featuring sunflower seed butter, coconut chips and dried blueberries, in the cookbook “Oh she glows every day”

-Energy bites: This week I made breakfast energy bites where you soaked dates in hot water for 20 minutes until they were soft and mixed them with crushed cashews, dried strawberries and dried blueberries, chia seeds and ground flaxseed, with a little cinnamon and vanilla extract. It’s a play on a recipe I found while exploring the cookbooks at my local library.

-Smoothies: Smoothies are definitely top of our list for breakfast. Start with some tropical flavors to remind you of summer and the warm weather ahead of us, or combine the good old banana and berries, maybe a little greens in there too. -Fruit skewers: Serve with a homemade yogurt dip and you've got a little breakfast that looks fancy and fun.
