Greek Quinoa salad
This time of year we’re often finding comfort in warm bowls of soup. As the weather gets colder, recipes such as this one may seem like a spring or summer affair. I also plan to spend my weekend preparing a few comfort soups, but I also can’t shy away from the lunches that remind me that this cold weather is only temporary. This Greek Quinoa salad is a great option for those days when you need something of sustenance but don’t have much time to eat (just prepare it in advance ofcourse). You can also play around with the dressing and add a range of different citrus fruit to switch it up a bit or you can also just serve with a good Tzatziki sauce.
Ingredients
1 ½ cups of quinoa, cooked
¾ cup of cherry tomatoes, cut in half, preferably different colors (if you want to make it pretty)
½ cup of cucumber, cut up
1/3 cup of red onion, chopped
1/3-1/2 cup of feta cheese, chopped
¼ cup of olive oil
1/8 – 1/4 cup of lemon juice (or fresh orange or lime juice)
Directions
Mix the olive oil and lemon juice in a small bowl. Put remaining ingredients in a big bowl and add the dressing. Mix well and serve.
