Brie & Pear Breakfast Quesadillas

The problem with new cookbooks is when I’m looking through them I start to crave things that are not in my fridge. When I was at the grocery store this weekend, I picked up a block of brie cheese and began to imagine what I might want to make with it. This morning it hit me: Brie and Pear quesadillas. This one is a definite must-try for anyone who loves brie paired with fruit and wants a quick breakfast that will make you melt.
Brie and pear breakfast quesadillas
-1-2 tsp of olive oil
-1 large whole wheat tortilla
-1/3 of a pear, cut in thin strips
-Brie cheese, thinly sliced
-A small pinch of cinnamon (optional)
Directions:
Open your tortilla and place on one side the pear slices and brie slices, sprinkle with a touch of cinnamon, and fold in half. Heat olive oil in a large skillet over medium heat and after it's warmed up place your tortilla in it. Cook a few minutes and flip it over to cook on the other side. Cut it in half and enjoy.
