Lovely Mediterranean wrap
It’s great when lunches and dinners can be simple and easy to put together. I’ve always loved wraps and how, with a little creativity, you can pull something off with the ingredients hiding in your fridge or pantry. Many of my recipes are born from having to think about what I can make with what I have on hand. What’s great about this recipe is you can play with it and add in other veggies or protein sources. You simply start with your base and then chose from there what you want to add. For this recipe, I chose a Mediterranean theme, which makes it a great vegetarian option due to all the wonderful array of vegetables you can include. Ingredients – Your base
1 tortilla
2 tsp (give or take) of regular cream cheese or vegan cream cheese or hummus
¼ cup of chopped sundried tomatoes
¼ cup of chopped spinach
Ingredients – Your extra toppings (add to your base any of these additional toppings)
1/3 cup of cooked chicken
¼ cup of cooked bacon, crumbled
1 tbsp of pine nuts
1 tbsp of red onions, chopped
¼ cup of feta cheese, crumbled
¼ cup of black olives
A few lettuce leaves
1/3 cup of fresh cherry tomatoes (instead of sundried tomatoes)
Directions
Spread cream cheese on your tortilla. Add ingredients on top, roll and serve. It couldn’t get any simpler!
