Valentine's Day Quinoa with Boursin cheese

I love the good, fine cheeses that you find in the grocery aisles. It had been years since I made something with Boursin, suprinsingly because it's not that expensive and adds the perfect little something extra to a lot of dishes. This salad was inspired by this time of love and the pomegranate seeds are a perfect addition as well for Valentine's day with their bold red color. I have a feeling that this simple quinoa dish will become a staple recipe I pull out again and again this time of year. It's that good.

Ingredients:

1 1/2 cups of cooked quinoa

Olive oil

Lemon juice

1/2 cup of pomegranate seeds

1/2 cup of cucumber, diced

1/3 cup of Gala apples, diced

Boursin cheese (a little or a lot - you decide and just crumble it on)

Directions:

Mix quinoa in a large bowl and add a tbsp or two of olive oil and of lemon juice. Add all other ingredients, mix, serve and enjoy.
