Mini salmon sliders with cheese and herbs

This time of year, many of us are thinking of holiday parties that we may be hosting and trying to come up with a menu. These little mini salmon sliders are simple to make and best served with a mini bun, garlic aioli and some type of fun vegetable slaw (not pictured here). Whether it’s a holiday cocktail, a family gathering or just dinner at home on a cold winter day, it’s great to have something simple to make that is ready in ten minutes and that is warm and comforting but still somewhat healthy (fresh salmon provides lots of omega 3 fatty acids which are important for brain health and are important in reducing the risk of heart disease and diabetes). And for those of you who read my last article on mindful parenting, these are a great choice as something easy to make with your kids and one they might actually try.
Ingredients
3/4 cup of fresh, cooked salmon
1 egg
¼ cup of Italian breadcrumbs
½ tsp salt
¼ tsp of garlic powder
¼ cup of old cheddar cheese
¼ cup of parsley and chives
1/2-1 tsp of mayonnaise (optional)
Directions
Mash up the salmon with a fork. Mix all other ingredients in a big bowl and stir. Make little salmon patties and cook in a pan, over medium heat, with olive oil.
