Ghoulish chocolate-covered apples

After spending this past Sunday apple picking at Mountain Orchards, my son and I had fun making these Halloween treats with a few of our Empire apples. I mean, what could be better on a night in then having fresh apple "donuts" dipped in chocolate and topped with homemade caramel sauce and chopped up marshmallows? Simply delicious.
Ingredients
Two apples
1 cup of semi-sweet chocolate chips
1 batch of homemade caramel sauce (I’ve used Angela Liddon’s Vegan caramel sauce from the Oh She Glows everyday cookbook and I’ve also tried this simple version with milk: https://www.thespruceeats.com/homemade-caramel-sauce-recipe-1945750)
3-4 large marshmallows, chopped into small pieces (we’ve used the vegan marshmallows which are also amazing)
Directions
Start by using an apple corer to remove the core of both apples, and then slicing them into small strips (They should have the shape of a donut, with a whole in the middle). Then melt chocolate chips either over a stovetop in a small pot, stirring frequently, or in the microwave for about a minute and a half. Once the chocolate is melted, mix it well and dip each of the apple “donuts” in the melted chocolate then lay them on a platter. Pour your caramel sauce on top and top it off with cut up marshmallows. Serve and enjoy!
