While most of my recipes are focused on healthy, whole foods, every once in a while I can't help but share something that is a pure, delicious treat. Featuring Angela Liddon's recipe for homemade chia seed jam, and the actual recipe adapted from Greta Podleski's new cookbook "Yum & Yummier", these cheesecake parfaits taste just as good as they sound (even more, if that's even possible).
Ingredients
1 1/2 cup lemon-flavored Greek yogurt
2/3 cup of cream cheese, softened
1/3 cup of honey graham crackers
1/2 cup of raspberry chia seed jam (find the recipe here: https://food52.com/recipes/62031-strawberry-vanilla-chia-seed-jam)
1/2 cup of fresh strawberries
1/8 cup of dark chocolate shavings
Directions
In a medium bowl, use a mixer to beat yogurt and cream cheese. In a separate bowl, crush crackers, then put them at the bottom of bowls or mini mason jars. Next, put in the yogurt-cream cheese mixture to about half way, then put jam on top, and add more yogurt-cream cheese mixture until a bit more than three-quarters full. Top with strawberries and dark chocolate shavings. It should look something like the photo below
