Dark Chocolate and Pomegranate Bark

One bite is all is took for our son to realize that he loves pomegranate seeds (and this was before I mixed it in with chocolate and I made the bark). I remember thinking this year that I wanted to make chocolate bark for the holidays but I wanted to make a healthier option that could work for everyone on my list. A vegan, gluten free option, but one that isn't a second choice option because of dietary restrictions. The truth is, this bark is truly addictive and a sweet treat around the holidays and starting off the new year and you can take this easy recipe and make it your own with some different variations. Pomegranates are a great choice because they pair really well with dark chocolate and even better because they have antioxidants.

Dark chocolate and pomegranate bark

Ingredients

3 cups of dark chocolate, chopped and melted

1 pomegranate

A pinch of sea salt (optional)

Directions

Place parchment paper on two trays. Cut pomegranate in half and then open it up to take all the seeds out. Discard anything that is not the pomegranate seeds themselves. Melt dark chocolate in the microwave, mixing every 30 seconds or so. Pour melted chocolate on the parchment paper and sprinkle the pomegranate seeds on top right away. Sprinkle with a bit of sea salt or other ingredients such as shredded coconut or nuts and seeds.
