Quinoa salad with fresh cherries, cucumber and feta cheese

I just can’t keep this quinoa salad from disappearing. I was inspired one day when I had some cherries on hand to make something yummy and high in protein. A huge bag of quinoa stared at me from the pantry and I tried to be creative to see what I could pair it with. Thankfully this recipe became a huge hit with my toddler so he will eat it like there’s no tomorrow so I know he’s getting some great nutrients. And best of all, it’s easy and something I can whip up almost effortlessly as I’m listening to music and going about my nighttime routine. And did I mention it tastes like summer? Cherries are only in season for a short period, so act quick!

Ingredients

2 cups of cooked quinoa

1/3 to 1/2 cup of fresh curries, cut up

1/8 cup of dried cranberries

1/3 cup of cucumber

1/3 cup of cut up feta cheese

1/8 cup + 1 tbsp of olive oil

1/8 cup of fresh lemon juice

Directions

Mix together in one big bowl the quinoa, cherries, dried cranberries, cucumber and feta cheese. Mix in a small bowl the olive oil and lemon juice then mix it in the large bowl with the other ingredients. Serve and enjoy.
