Healthy date rolls

My father-in-law recently gave me a huge mason jar of slivered almonds. I always love getting things from him and his family - whether it's an ingredient to inspire me to create something new (homemade almond butter was a close second on my list and I still have enough to make it) or some homec ooked meals that he packs for us to bring home (we love his soups and I guess that's where the inspiration began to start cooking - making soups seemed like a good start and something I loved to recreate). This recipe is actually inspired by Natural Delights Medjool date rolls. If you haven't already heard about them, they come in various flavors - like coconut, almonds and my favorite that was out this fall, pumpkin spice. The thing about the recipe is you can be very creative and adjust it to your liking. If you want to add in some spices like cinnamon and nutmeg, you can. You can also chose to roll them in any type of coating, but for this example I did slivered almonds and shredded coconut. Next time I think I'll try them rolled in crushed M&Ms for a treat. Enjoy!

Ingredients

10 Medjool dates, pitted and chopped

1 tsp of water

Crushed, slivered almonds

Shredded coconut

Directions

Mix dates and water in a small blender or food processor. Roll into small balls into slivered almonds and/or shredded coconut (or desired coating).
