The Easiest Greek salad

I love this recipe. It marries two things I absolutely love; it is a cross between a greek salad and pico de gallo. The lime juice is what makes it like salsa freshca, but it has added cucumber, feta cheese and crushed tortilla chips. This is an easy recipe to make for a get together, and an amazing side dish with veggie burgers. Just don't forget to put the tortilla chips in last or save them for serving time if you're making this in advance, or you'll have a soggy (unsatisfying) mess!

The Easiest Greek salad

Ingredients

2 small tomatoes, chopped

1 cucumber, chopped

2 tbsp of red onion, chopped

2 tbsp olive oil

1 tbsp lime juice

A dash or two of salt

1/4-1/2 cup of feta cheese, crumbled

1/4 cup of tortilla chips, crushed, to sprinkle on top (Late July's sea salt multigrain tortilla chips are a great option, and they're organic and GMO-free, found at most health food stores, http://www.latejuly.com/)

Directions

Mix all ingredients in a big bowl, except the crushed tortilla chips. Add these on top when you're ready to serve.
