Two amazing, simple BBQ recipes


Last summer, a close friend of mine and her partner lent me their camping BBQ. It’s become a spring to fall tradition since to make fish on the BBQ, paired with an amazing side like BBQ corn on the cob or these delicious vegetables kebabs. I love making this for dinner because it’s simple and ready in a pinch – but it definitely doesn’t miss the mark on flavor. And eating outside is part of the fun. My son made himself super comfortable in his adorable Oshkosh fold up chair, eating in his lap until his plate was almost empty (because ofcourse he left all the vegetables behind but I find lots of creative ways to add veggies in his diet which you’ll also see in some of my upcoming recipes). Enjoy these recipes for delicious basa fillets and Jamaican spiced vegetable kebabs.

Basa fillets with smoked paprika

Ingredients

2 basa fillets, thawed (if frozen – I use M&M’s sustainable basa fillets which come frozen at an affordable price)

2 tbsp olive oil

¼ to 1/2 tsp of smoked paprika

Directions

Heat up your BBQ to a medium high temperature (400 to 500 f). While it’s heating up, grab two large pieces of tin foil and place your basa fillets on them, crushing the sides of the tin foil to make a bowl around your fish. Add 1 tbsp of olive oil on each of your fillets and 1/8 to ¼ of a tsp of smoked paprika on each (depending on your taste). Rub in the olive oil and paprika on your fish and then put them on the BBQ, cooking them for about 20 minutes until they are fully cooked.

Jamaican spiced vegetable kebabs

Ingredients:

1 zucchini

1 yellow or orange pepper

¼ of a red onion

Halloum/Halloumi cheese

1 tbsp of olive oil

1 clove of garlic, chopped

Lime juice from ½ a lime

1 to 1 ½ tbsp of brown sugar

½ tsp of all spice seasoning

Bamboo skewars

Directions

In a bowl, mix together the olive oil, garlic, lime juice, brown sugar and all-spice seasoning. Thread the vegetables and cheese on bamboo skewars and let them sit in the marinade for 15-20 minutes. Then put them on tin foil, crushing the sides of the tin foil to make a little bowl and cook them on the BBQ with your fish, also at about medium high temperature (400 to 500 f) for about 15 minutes. Remove and enjoy!
