Mango chia seed pudding

I love cooking with superfoods. Chia seeds are a good source of omega-3 fatty acids, fibre, iron, antioxidants, and protein. This mango chia seed pudding is one I crave regularly because of its intense mango flavor and it’s such a portable snack. I usually store it in mini mason jars for a quick grab-and-go breakfast or something to keep me going in the afternoon. And if you’re not much of a fan for the overpowering flavor of coconut milk, be rest assured that all you’ll get is a hint of coconut flavor. What stands out much more is the amazing taste of fresh, ripe mangos.

Mango Chia Seed Pudding

Ingredients:

1 ripe mango, peeled, pitted and chopped

1/8 cup of coconut milk

1 teaspoon of chia seeds

Directions:

Puree the mango pieces and coconut milk in a blender. Mix in chia seeds and stir well. Store in small portable containers.
